Asparagus and Cheese Casserole

Nowadays mornings are so busy and the last thing we have time for is a warm, healthy breakfast. Well I have the solution for you! My quick and easy...and healthy...egg, cheese, and asparagus casserole. This dish takes about 10 minutes to prepare and bakes up in no time. While your oven is preheating to 375 degrees you are going to chop and sautee onions and asparagus in olive oil and salt and pepper. Next you wisk together six eggs. To make the dish healthier I use three whole eggs and three whites. The whites also make the casserole fluffier. To the egg mixture, you'll want to add salt, pepper and a pinch of hot pepper flakes for a little heat. Temper in the hot vegetable mixture to the eggs and then add about 2-3 cups shredded cheddar cheese. Spray your baking dish with cooking spray and pour in the egg mixture. Bake the casserole for about 20-25 minutes until desired brownness and Wa-La! You can substitute any vegetable in place of asparagus such as spinach, mushrooms, peppers or even all together. I usually bake this dish the night before and reheat it in the microwave before serving. Also to make for larger groups you can simply double the ingredients. Packed with protein and calcium this dish will battled those morning blues in no time!
